Nectarine Soy Smoothie with Passion Fruit

Soy yogurt makes this smoothie almost spoonable, and the passion fruit gives it a fragrant, tropical sourness. Ripe nectarines provide all the sweetness it needs.

About this smoothie

This is a thick, plant-based smoothie that sits somewhere between a drink and a breakfast bowl. Soy yogurt is one of the protein-richer dairy alternatives and has a mild taste that lets the fruit shine.

Passion fruit is ripe when the skin is dark and wrinkled; then the pulp is at its most aromatic. Its crunchy seeds can be blended in or strained out. Nectarines are best in summer, but in winter you can use frozen peach slices instead.

Bartender tips

  • Choose passion fruits with wrinkled skin; smooth ones are usually not ripe yet.
  • For a smoothie bowl, skip the water and top it with oats and sliced fruit.

Variations

With mango
Replace one nectarine with half a mango for a more tropical flavour.
