Blackberry Pear Smoothie with Passion Fruit
Taste
Tart and aromatic with a tropical perfume, a soft pear sweetness and a medium body.
About this smoothie
Passion fruit has an intense tropical aroma and a sharp acidity, which is why a single fruit per glass is plenty. Its pulp comes with black seeds; they are edible and give a slight crunch, but they can also be strained out. Blackberries bring an earthy, winey berry flavor and a dark color, pear softness and natural sweetness.
Choose a passion fruit with wrinkled skin: that is a sign of ripeness, not age. The smoothie works well as a light afternoon drink and is refreshing on hot days, especially with frozen blackberries.
Bartender tips
Blend the passion fruit only briefly or add it at the end if you want to keep the seeds whole rather than gritty.
A very ripe pear makes extra sweetener unnecessary.
Variations
Creamy version
Add 3 tbsp natural yogurt for a softer, pastel-colored smoothie.
