Lamb's Lettuce Cucumber Smoothie with Avocado and Mint Tea

This green smoothie skips fruit sugar almost entirely. Avocado makes it velvety, cucumber and mint keep it cool, and the result tastes more like a chilled green soup in a glass than a dessert.

Ingredients

1

Garnish: A mint sprig · Ice: Served up, no ice

Method

  1. Brew the tea, let it cool completely and chill it in the fridge.
  2. Wash the lamb's lettuce thoroughly, trim the roots and let it drain.
  3. Wash and roughly chop the cucumber; halve and stone the avocado and scoop out the flesh.
  4. Blend everything with the lime juice until creamy and serve immediately.

Taste

Velvety and cool with a mild green flavour and minty finish; savoury rather than sweet.

About this smoothie

Savoury green smoothies are an acquired taste, but many people enjoy them precisely because they are not sweet. Avocado provides creaminess and mostly monounsaturated fat, which also helps absorb fat-soluble vitamins from the lettuce.

Cucumber adds freshness and volume, and cold peppermint tea brings a clean, cooling finish. Drink it as a light lunch companion or on a hot afternoon.

Bartender tips

  • A pinch of salt brings out the savoury side surprisingly well.
  • If you want some sweetness, add half a green apple.

Variations

Sweeter version
Add half a green apple or a handful of green grapes.
