Lamb's Lettuce and Apple Smoothie

Taste

Light and juicy, with sweet apple, a fresh green colour and a soft, nutty leaf note.

About this smoothie

When summer fruit is out of season, apples and lamb's lettuce are easy to find at any market. Lamb's lettuce is very tender and mild, so it blends without bitterness and contributes folate and vitamin K. Red apples give the drink its sweetness, juice and fibre, especially when you blend them with the peel.

This is a light, refreshing smoothie rather than a filling one. It works well alongside breakfast or as a fresh drink between meals, and a squeeze of lime makes it taste even cleaner.

Bartender tips

  • A sweet, aromatic apple such as Elstar or Braeburn gives the best flavour.
  • Add a few ice cubes when blending if your apples are at room temperature.

Variations

Pear swap
Replace half the apple with a ripe pear for a softer, creamier texture.
