Taste
Tart and juicy with deep berry flavour and a light, earthy green note.
About this smoothie
Kale has a stronger, more cabbage-like taste than spinach, so it needs a bold partner. Blackberries do that job well: their deep colour hides the green, and their tartness balances the earthy leaf. Kale is a good source of vitamin K and vitamin C, blackberries bring fibre.
The original recipe used only berries, kale and coconut water, which makes a fairly tart drink. Half a banana is listed as optional for anyone who prefers it sweeter. Remove the tough central stalk of the kale, as it does not blend smoothly.
Bartender tips
Massaging the kale briefly between your hands softens it and makes the flavour milder.
Frozen blackberries work very well and give a thicker, colder drink.
Variations
Blueberry version
Swap the blackberries for blueberries for a sweeter, less tart smoothie.
Frequently asked questions
Does it taste of kale?
Only slightly; the blackberries dominate. Start with half a leaf if you are new to kale.
Can I use curly or Tuscan kale?
Both work; Tuscan (cavolo nero) is a little milder.
