About this smoothie

Apple and ginger are a pairing many people know from juices and hot drinks. In a smoothie the whole fruit stays in, so you keep the fibre and get a thicker, more satisfying texture than juice. The ripe pear adds softness and sweetness, and lemon juice keeps the colour bright and the flavour lively.

Apples and pears both provide fibre, and lemon adds vitamin C. It is a light smoothie that works well in the morning or as a fresh drink in the afternoon.

Bartender tips

  • Add half a banana if you want a creamier, sweeter smoothie.
  • Taste before adding all the lemon juice; some apples are already quite tart.

Variations

Green apple version
Use a green apple and a handful of baby spinach for a sharper, greener glass.

Frequently asked questions

Is it vegan?

Yes, it contains only fruit, ginger, lemon and water.

Which apple works best?

Sweet and crisp varieties balance the lemon and ginger best; tart apples make it very sharp.

Can I make it the night before?

Thanks to the lemon juice it keeps its colour for several hours in a closed jar in the fridge.
