Coconut Pineapple Smoothie

Pineapple is sweet and tangy enough to hide a good handful of spinach completely. A spoon of coconut oil adds a light coconut aroma and a rounder feel.

Taste

Fresh and tropical, with juicy pineapple, a mild green note and a hint of coconut.

About this smoothie

This is a green smoothie that tastes mostly of fruit. Pineapple provides sweetness, acidity and vitamin C, while baby spinach brings colour, folate and vitamin K with hardly any flavour of its own. Coconut oil contributes a gentle coconut note and makes the texture a little silkier.

The smoothie works well in the morning or after sport. Coconut oil solidifies when cold, so melt it and blend it with the pineapple first before adding cold water.

Bartender tips

  • Use coconut water instead of plain water for a stronger coconut flavour.
  • Blending the oil with the fruit before the cold water prevents small flakes.

Variations

Piña colada style
Replace the water with coconut milk drink and leave out the spinach for a creamy tropical smoothie.
