This is about as simple as a green smoothie gets: banana, spinach, chia seeds and water. The banana carries the sweetness, and the chia seeds thicken the glass after a few minutes.

Method

  1. Peel the banana and break it into pieces.
  2. Wash the baby spinach.
  3. Blend banana, spinach, chia seeds and water for about 45 seconds.
  4. Let it stand for 3 to 5 minutes, stir and pour into a glass.

Mild, sweet and creamy, with a clean leafy note; it thickens noticeably as the chia seeds swell.

About this smoothie

Chia seeds come from a plant in the sage family native to Central America. They are known for their fibre and for plant-based omega-3 fatty acids, and they swell when they meet liquid, which gives smoothies a thicker, almost pudding-like texture. Baby spinach adds colour but very little flavour, and a ripe banana makes the whole thing sweet and creamy.

It is a good starter green smoothie and works well for breakfast.
