Cherimoya tastes like a cross between pineapple, banana and vanilla custard, and it makes this smoothie wonderfully creamy. Blueberries add colour and tartness, spinach a hidden portion of greens.

Blueberry, Cherimoya and Baby Spinach Smoothie
Taste
Creamy and exotic, with vanilla-like cherimoya, tangy blueberry and a soft apple finish.
About this smoothie
Cherimoya, sometimes called custard apple, comes originally from the Andes and is grown today in warm regions including southern Spain. Its white flesh is soft and creamy, and its flavour recalls pineapple, banana and vanilla. The large black seeds are not edible and must be removed before blending.
Blueberries add colour and a gentle tartness, half an apple some juice, and baby spinach folate and vitamin K. The smoothie is naturally sweet and filling, a special treat for breakfast in the winter months when cherimoyas are in season.
Bartender tips
Remove every cherimoya seed carefully; they are hard and should not be eaten or blended.
A ripe cherimoya gives to gentle pressure like a ripe avocado.
Variations
Banana swap
If you cannot find cherimoya, half a banana gives a similar creaminess, though less exotic in flavour.
