Taste

Juicy and herbal, sweet pear with basil, cool mint and a mild green note.

About this smoothie

This smoothie layers three herbal notes: basil for a sweet, peppery perfume, peppermint tea for coolness and lamb's lettuce for a mild, nutty green. Ripe pear holds everything together with juiciness and natural sweetness. Pears provide fibre, and leafy greens add folate and vitamin K.

The tea should be brewed ahead and fully cooled. The result is light and not too sweet, a good choice for a warm afternoon or alongside a light lunch.

Bartender tips

  • Keep the basil to a few leaves; too much can taste soapy.
  • Chill the tea in the fridge overnight for the coldest result.

Variations

Without tea
Use cold water and a few fresh mint leaves instead of peppermint tea.
