Pomegranate Lamb's Lettuce Smoothie with Peppermint Tea

Taste

Light and refreshing, with juicy pear sweetness, tart pomegranate and a cool mint finish.

About this smoothie

Pomegranate seeds (arils) are juicy, crunchy and sweet and sour, and they give smoothies a pink blush and a clean, slightly tart flavour. They are a source of vitamin C and fibre. Cooled peppermint tea replaces water and adds a cooling, refreshing note without any sugar. A ripe pear gives natural sweetness and body, and lamb's lettuce adds mild, nutty greens. The combination is light and refreshing, a good drink for warm days or after a meal when something heavy would be too much.

Bartender tips

  • Brew the tea a little stronger than for drinking, as the fruit softens the mint.
  • A few fresh mint leaves in the blender intensify the freshness.

Variations

With apple
Use a green apple instead of the pear for a crisper, more tart smoothie.
