Banana Smoothie with Quark

Quark is a German and Central European favourite, and in a smoothie it works like a thicker, milder yoghurt. With banana and pear it becomes creamy and naturally sweet.

About this smoothie

Quark is a fresh dairy product popular in Germany, Austria and neighbouring countries. It is rich in protein and has a mild, slightly tangy taste, so it makes smoothies creamy and satisfying. Banana gives sweetness and body, and half a pear adds juiciness and a delicate aroma.

This smoothie is a good breakfast or a snack after training. Low fat quark is fine here; the banana and milk supply enough creaminess. Outside Central Europe, strained Greek yoghurt or skyr is the closest substitute.

Bartender tips

  • Add a little more milk if you prefer a thinner smoothie.
  • A pinch of cinnamon or vanilla suits banana and quark very well.

Variations

With oats
Add 2 tbsp rolled oats for an even more filling breakfast.

Frequently asked questions

What can I use instead of quark?

Greek yoghurt or skyr work well and give a similar thickness and protein content.

Is this smoothie vegan?

No, it contains quark and milk. Soy yoghurt and a plant drink make a vegan version.

Can I prepare it the evening before?

Yes, it keeps in a closed jar in the fridge overnight; stir before drinking.
