Taste

Fresh and fruity with apple sweetness up front and a mild, nutty green finish.

About this smoothie

This is one of the simplest green smoothies. Baby spinach and lamb's lettuce are both mild, tender leaves; lamb's lettuce adds a slightly nutty note, and spinach contains vitamin K and folate. The apple juice brings sweetness and a fruity acidity that balances the green flavour.

Because it contains no whole fruit, the drink is thinner than most smoothies, more like a green juice. It is refreshing at breakfast or as a light drink in the afternoon.

Bartender tips

  • Use naturally cloudy apple juice; it has more body and flavour than clear juice.
  • Lamb's lettuce is often sandy, so rinse it in several changes of water.

Variations

Thicker
Add half a banana or half an apple for a creamier smoothie.
