Method

  1. Halve and pit the avocado and scoop out the flesh.
  2. Put avocado, lupin yogurt, oats, matcha and soy drink into the blender.
  3. Blend for about 60 seconds until completely smooth.
  4. Taste, sweeten if you like and serve immediately.

About this smoothie

Lupin yogurt is a plant based yogurt alternative made from the seeds of sweet lupins, a legume. It has a mild, slightly nutty taste. Together with avocado and soy drink it creates a very creamy base, and a teaspoon of oats adds a little extra body. Matcha, powdered green tea, brings caffeine and a grassy aroma.

The smoothie is not sweet, so add a little maple syrup or half a banana if you prefer it sweeter. It suits breakfast well.

  • Sift the matcha so it does not form lumps.
