Simple Avocado Raspberry Smoothie
Taste
Silky and creamy, with a bright raspberry tartness and a subtle, buttery background.
About this smoothie
Avocado is rarely the flavor in a smoothie; it is the texture. Its soft flesh contains mostly unsaturated fat, which gives the drink a silky body and makes it more filling. Raspberries take the lead in taste with their bright, slightly sour aroma, and they are a good source of fiber.
The original recipe used a full avocado per glass, which is heavy, so here half an avocado does the job. Because avocado has almost no sweetness, a teaspoon of honey or agave syrup is worth adding. Drink it straight away, as avocado darkens with time.
Bartender tips
Brush the unused avocado half with lemon juice and keep it wrapped in the fridge.
Frozen raspberries make the smoothie colder and a little thicker.
Variations
With apple
Add a cored red apple for more sweetness and juice.
Frequently asked questions
Does the smoothie taste of avocado?
Only faintly. The avocado mainly gives creaminess; the raspberries dominate the flavor.
Can I prepare it in advance?
It is best fresh, as avocado oxidizes and turns brownish after a few hours.
Is it vegan?
Yes, if you sweeten with agave syrup instead of honey.
