About this smoothie

Avocado is a useful smoothie ingredient because it adds creaminess without dairy and has very little taste of its own. Here it carries the juicy, peachy flavour of a ripe nectarine, while mint adds a cool accent. Avocado is known for its monounsaturated fat, nectarines for vitamin C.

With coconut water as the base, the drink remains fairly light despite the avocado. It works as a summer breakfast or a filling snack.

Bartender tips

  • Keep the other avocado half with its stone, wrapped tightly, in the fridge.
  • A few ice cubes help if the fruit is not chilled.

Variations

Without mint
Leave out the mint and add a squeeze of lime instead.
