Ginger Coconut Smoothie with Parsley

No fruit, just herbs, leaves and a hit of ginger. Coconut water brings just enough natural sweetness to hold the peppery rocket and fresh mint together.

About this smoothie

This is a green smoothie for people who like savoury, herbal flavours rather than sweet fruit. Parsley and rocket add a peppery, grassy note, mint cools, and fresh ginger gives a noticeable heat. Parsley is a good source of vitamin K, and ginger has long been used in kitchens around the world for its warming spiciness.

The coconut water keeps the drink light. It works best as a small, refreshing glass before or with a meal rather than as a filling breakfast.

Bartender tips

  • Start with less ginger; you can always blend in more.
  • A few ice cubes or chilled coconut water make the herbal flavour much more refreshing.

Variations

Softer version
Add half a green apple for sweetness and body.
