Apple Watermelon Smoothie with Mint

Watermelon is about as refreshing as fruit gets, and with apple and mint it turns into a pink summer cooler. You barely need any extra water.

Garnish: Mint sprig · Ice: Served up, no ice

Method

  1. Wash the apple, remove the core and cut it into quarters.
  2. Cut the watermelon flesh from the rind, remove the seeds and dice it.
  3. Wash the mint and pick the leaves.
  4. Blend everything for about 40 seconds, adding water only if needed, and serve very cold.

Very light and juicy, with sweet watermelon, crisp apple and a cool, clean mint finish.

About this smoothie

Watermelon consists largely of water, which makes it one of the most thirst-quenching fruits. Its red colour comes from lycopene, the same pigment found in tomatoes. On its own it can taste thin in a smoothie, so an apple adds body and a touch of acidity.

Mint is the classic partner for watermelon, from salads to drinks, and gives the smoothie a cooling finish. Serve it very cold on hot days, by the pool or after sport.
