Yellow Pepper Smoothie with Avocado
Taste
Creamy and mild, with the sweet, juicy taste of raw pepper and a buttery avocado base.
About this smoothie
Yellow and red bell peppers are the sweet, ripe versions of the pepper and are well known for their high vitamin C content. Raw, they taste crisp and juicy, which makes them a good base for a savoury smoothie. Avocado adds creaminess and a buttery note, and a little agave syrup rounds off the flavour.
This is not a sweet fruit smoothie, so think of it as a light, cold savoury drink. It goes well with lunch, or with a pinch of salt and pepper as a quick snack.
Bartender tips
Only use yellow or red peppers: green ones taste bitter and grassy.
A pinch of salt and black pepper turns it into a savoury cold soup.
Variations
Tomato version
Add one ripe tomato for a gazpacho-like drink.
Frequently asked questions
