About this smoothie

Fennel tea is a caffeine free herbal infusion made from fennel seeds, with a mild, sweet aniseed aroma. Used cold as the base of a smoothie, it adds flavour without sugar. Baby spinach contributes colour and volume, fresh ginger a pleasant heat, and chia seeds some fibre and a slightly thicker texture.

Without fruit this drink is light and savoury leaning. Half a green apple is an optional addition if you want a touch of sweetness and acidity.

Bartender tips

  • Crush the fennel seeds lightly before brewing for a stronger aroma.
  • Start with a small piece of ginger and add more to taste.

Variations

Pear fennel
Add half a ripe pear; pear and fennel are a classic pairing.
