Apple Spinach Smoothie with Fruit Tea

Two kinds of apple give this green smoothie both sweetness and bite. Baby spinach colours it green, and fruit tea adds a soft fruity depth.

About this smoothie

Apple and spinach are a classic entry into green smoothies: the apple is familiar and sweet enough to mask the mild spinach. Combining a sweet red apple with a tart green one gives a more rounded flavour than either alone. Baby spinach is tender and mild, so it blends smoothly. Cooled fruit tea replaces juice and keeps the sugar content moderate. It is a light, vegan smoothie for breakfast or the afternoon.

Bartender tips

  • Blend the spinach with the tea first, then add the apples, for the smoothest texture.
  • Chilled apples make the smoothie more refreshing.

Variations

With lemon
Add 1 tsp lemon juice to keep the colour bright green.
