Red Smoothie with Tomato and Ginger

This one is savoury, not sweet: a ripe beef tomato, some tomato juice and mild greens, sharpened with fresh ginger. It tastes a little like a chilled vegetable soup in a glass.

About this smoothie

Savoury smoothies are less common, but they are a good option for anyone who finds fruit smoothies too sweet. Ripe tomatoes are known for lycopene, the red pigment in their flesh, and give the drink a full, juicy body. Lamb's lettuce and baby spinach add green notes, and ginger brings warmth and a pleasant sharpness.

The smoothie is plant based and light. It works as a fresh midday drink or a starter on a hot day, similar to a thin gazpacho.

Bartender tips

  • A pinch of salt and a few drops of lemon juice make the flavours pop.
  • Use only very ripe, aromatic tomatoes: watery ones make a dull smoothie.

Variations

Pepper version
Add a quarter of a red bell pepper for more sweetness and colour.
