Method

  1. Sort the raspberries, rinse briefly and drain.
  2. Wash the peaches, remove the stones and cut into pieces.
  3. Blend both with cold water for about 45 seconds.
  4. Pour into a glass and serve.

About this smoothie

Peach melba, peaches with raspberry sauce and vanilla ice cream, was created by the French chef Auguste Escoffier in honour of the singer Nellie Melba. The fruit pairing works just as well in a smoothie: ripe peaches bring body and floral sweetness, raspberries acidity and colour.

Both fruits provide vitamin C, and raspberries add fibre. Made with water, this stays a light, fruity drink for summer mornings or warm afternoons.

  • Out of season, frozen peaches and raspberries give a thick, cold result.
