Raspberry Nectarine Smoothie

Raspberry and stone fruit are a classic summer pairing, the same idea as a peach melba without the ice cream. Juicy nectarine softens the tart berries.

About this smoothie

Raspberries and nectarines are both at their best in mid summer, which makes this smoothie a seasonal treat. The nectarine brings juicy, honeyed sweetness and body, the raspberries a sharp, fragrant acidity and a strong colour. Both fruits provide vitamin C, and raspberries are a good source of fibre.

The flavour recalls the pairing of raspberries and peaches found in many desserts, here in a light, dairy free form. Best as a refreshing drink on a warm day.

Bartender tips

  • A few frozen raspberries make it cold without ice.
  • Peach works in place of nectarine; peel it if the fuzz bothers you.

Variations

Melba style
Blend in 2 tbsp vanilla yogurt for a creamy, dessert-like version.
