About this smoothie

Stone fruit and basil are a well-known combination in summer kitchens, from salads to sorbets. The herb's sweet, slightly peppery flavour brings out the fragrance of a ripe nectarine.

Apples are available all year and give the smoothie body and a pleasant acidity. Together with the nectarine, the drink is naturally sweet and needs no sugar. It is light enough for a hot afternoon and quick enough for a rushed breakfast.

Bartender tips

  • A sweet apple variety such as Gala or Elstar works best here.
  • For a thicker smoothie, freeze the nectarine pieces beforehand.

Variations

With yogurt
Replace half the water with natural yogurt for a creamy version.
