Pomegranate Smoothie with Dandelion

Pomegranate seeds bring a juicy, winey tartness that stands up well to the bitterness of dandelion. Pear softens everything and adds body.

About this smoothie

Pomegranate seeds, also called arils, are juicy and tart-sweet and contain polyphenols as well as vitamin C. Blended with green leaves, their red colour mixes into a brownish, autumnal shade, so this smoothie wins on taste rather than looks. Dandelion leaves bring a pleasant bitterness, baby spinach a mild green note, and a ripe pear ties it all together with sweetness. A good glass for autumn and early spring.

Bartender tips

  • Knock the pomegranate halves with a wooden spoon over a bowl to free the seeds cleanly.
  • Pomegranate seeds leave small hard bits; strain the smoothie for a silky texture.

Variations

Without dandelion
Use lamb's lettuce for a milder, nuttier green.
