Pomegranate Rocket Smoothie with Yogurt

Tart pomegranate, peppery rocket and cool yogurt: this smoothie is more grown-up than sweet. Half a banana adds just enough body and sweetness to hold it together.

Pomegranate Rocket Smoothie with Yogurt

Taste

Tart and creamy, with juicy pomegranate, cool yogurt and a gentle peppery rocket finish.

About this smoothie

Pomegranate seeds are juicy, tart and slightly astringent, and they bring a beautiful pink colour once blended with yogurt. Rocket adds a peppery note that works surprisingly well with the fruit's acidity, much as it does in a salad with pomegranate.

The original recipe used only pomegranate, rocket, yogurt and water; half a banana is added here to give the drink body and soften the tartness. Yogurt provides protein and a creamy base. It suits a light breakfast or a fresh snack in autumn and winter, when pomegranates are in season.

Bartender tips

  • Pomegranate pips leave small crunchy bits; strain through a sieve for a perfectly smooth drink.
  • To seed a pomegranate quickly, halve it and tap the back with a wooden spoon over a bowl.

Variations

Spinach version
Swap the rocket for baby spinach for a mild, sweeter smoothie.
