About this smoothie

Fennel tea, made from crushed fennel seeds, is a traditional household tea in Germany with a mild, sweetish aniseed flavour. In a smoothie it works as a light liquid that adds aroma without sugar. Pineapple brings juicy acidity and tropical sweetness, and pear gives body and a gentle, grainy softness. The combination is light and refreshing and makes a nice change from the usual juice-based smoothies.

Bartender tips

  • Crush the fennel seeds lightly before brewing for a fuller flavour.
  • Chill the tea in the fridge so the smoothie stays cold without ice.

Variations

With apple
Replace the pear with a sweet apple for a crisper taste.
