Pear and rosemary are a pairing chefs like for desserts, and it translates well into a smoothie. Basil adds a softer, peppery green note that links the two.

Light and fruity, with juicy pear, a fresh basil note and a gentle, piney rosemary finish.
About this smoothie
Herbs are an easy way to make a simple fruit smoothie more interesting without adding sugar. Rosemary is intensely aromatic and slightly resinous, so a small amount is enough; basil is milder and brings a fresh, slightly sweet green flavour. The pear provides the body and all the sweetness, plus some fibre.
This light smoothie suits a late breakfast or an afternoon break. It is also a good starting point if you want to experiment with herbs: begin with a little rosemary and increase it next time if you like the taste.
Bartender tips
Use fresh rosemary rather than dried; dried needles stay gritty and can taste dusty.
A squeeze of lemon juice sharpens the herbs and keeps the pear from browning.
Variations
With apple
Replace half the pear with a green apple for a crisper, more tart version.
Frequently asked questions
Can I use dried rosemary?
You can, but use only a small pinch and blend well. Fresh rosemary gives a cleaner flavour.
Is this smoothie vegan?
Yes, it contains only fruit, herbs and water.
Can I leave out the basil?
Yes. The smoothie then tastes more clearly of pear and rosemary.
