About this smoothie

Passion fruit is small, but its pulp is packed with aroma: tart, floral and tropical. Just one fruit is enough to flavour a whole glass. Pear supplies a mellow, juicy base and fibre, apple juice some extra sweetness. Passion fruit also contributes vitamin C.

The small black seeds are edible and give a light crunch; blend briefly to keep them whole, or strain if you prefer. A fragrant smoothie for breakfast or the afternoon.

Bartender tips

  • Ripe passion fruit has wrinkled skin and feels heavy for its size.
  • Blend the passion fruit only briefly so the seeds do not break and taste bitter.

Variations

Tropical version
Replace the pear with mango for a sweeter, fuller drink.
