About this smoothie
Matcha is finely ground Japanese green tea. Because you consume the whole leaf, it tastes intense and contains caffeine, roughly comparable to a cup of green tea or more, so one teaspoon is plenty. Passion fruit pulp, including its crunchy seeds, adds acidity and a tropical aroma, while pear and a splash of apple juice balance it with sweetness.
The smoothie is light and refreshing and suits breakfast or the early afternoon. Because of the caffeine, it is not ideal late in the evening.
Bartender tips
Use good ceremonial or culinary matcha; cheap powder often tastes bitter.
If you do not like the crunch of passion fruit seeds, press the pulp through a sieve first.
