Nectarine Spinach Smoothie with Lemon

Two nectarines, a handful of spinach, water: this is a green smoothie at its most basic. The fruit has to be really ripe, then nothing else is needed.

About this smoothie

This recipe relies entirely on the quality of the nectarines, so it is best made in high summer when they are juicy and fragrant. With water as the only liquid, their peachy flavour comes through clearly. Baby spinach adds leafy greens and a hint of colour without dominating. A few drops of lemon keep the taste fresh. The smoothie is vegan, has no added sugar and makes a good take-along drink in a jar.

Bartender tips

  • Chill the nectarines beforehand; without ice, the fruit temperature determines how cold the drink gets.
  • If the nectarines are not sweet enough, a date helps.

Variations

With coconut water
Replace the water with coconut water for a sweeter, rounder drink.
