Method

  1. Peel the persimmon and cut it into pieces, removing any seeds.
  2. Peel the mango, cut the flesh from the stone and chop it.
  3. Wash the parsley.
  4. Blend everything with the coconut milk until creamy and pour into a glass.

About this smoothie

Persimmons (kaki) are in season in autumn and early winter, when fresh mango often has to travel far. Together they make a rich, deep orange smoothie. Both fruits contain beta carotene, which explains the colour.

Use only soft, fully ripe persimmons of the astringent type, or the firm Sharon variety, which can be eaten while still crisp. An unripe astringent persimmon makes your mouth feel dry. The parsley is a small herbal counterpoint to all that sweetness.

  • Sharon fruit can be blended with the skin on; just remove the calyx.
  • A squeeze of lime balances the sweetness.
