About this smoothie

Parsley is more than a garnish: in a smoothie it adds a clean, herbal flavour and a strong green colour. It is also known for its vitamin C and vitamin K content. Lime juice and kiwi bring the acidity, so this drink is sour rather than sweet.

The old recipe used the juice of three limes for two glasses, which is very tart; 20 ml per glass is a friendlier balance, and you can add a little honey if needed. Drink it in the morning when you want something wakeful and fresh.

Bartender tips

  • Start with half the lime juice and add more to taste.
  • Use flat-leaf parsley; it blends more smoothly than curly parsley.

Variations

Mint instead of parsley
Swap the parsley for a few mint leaves for a sweeter, cooler herb note.
