About this smoothie

This is a minimalist green smoothie: spinach, ginger and coconut water. Ginger brings warmth and spice, and a small piece goes a long way, so start carefully. Baby spinach adds colour and leafy greens with hardly any taste of its own.

Because there is no fruit apart from the optional apple, the drink is thin and light, more like a green juice than a thick smoothie. Half an apple adds sweetness and body if you want it. Good as a morning refresher.

Bartender tips

  • Grate the ginger instead of slicing it for a finer texture.
  • Start with 3 g ginger if you are sensitive to spice.

Variations

With lemon
Add 1 tbsp lemon juice for a zesty, lemonade-like version.
