Lamb's Lettuce Papaya Smoothie with Basil
Taste
Velvety and mild, with tropical papaya sweetness, a nutty green note and a hint of basil.
About this smoothie
Papaya's soft, buttery flesh blends into a smooth purée with a mild, musky sweetness. On its own it can taste a little flat, which is where the optional lime and the basil help: the herb's peppery aroma and the citrus acidity make the fruit taste brighter. Lamb's lettuce brings a nutty flavor and tender leaves that blend easily.
The color is an unusual golden olive, depending on how ripe the papaya is. Remember to scrape out all the black seeds, which are bitter. The smoothie is gentle enough for breakfast and refreshing on a warm afternoon.
Bartender tips
Lime juice makes a real difference with papaya; do not skip it if the fruit tastes flat.
Use only two basil leaves at first, as the herb quickly dominates.
Variations
Mango version
Swap the papaya for mango for a sweeter, more aromatic smoothie.
