About this smoothie

This is a minimalist green smoothie. Kiwis are rich in vitamin C and bring enough juice and acidity to carry the leaves on their own. Lamb's lettuce has soft leaves and a mild, nutty flavour, which makes it one of the easiest salads to blend. Without banana or dairy, the drink is light and quite tart; a teaspoon of honey softens it if you prefer. A fresh start to the morning.

Bartender tips

  • Very ripe kiwis make the smoothie noticeably sweeter.
  • Blend only until smooth, as crushed kiwi seeds can turn slightly bitter.

Variations

Creamier version
Add half a banana or 50 g natural yoghurt for more body.

Frequently asked questions

Can I use spinach instead of lamb's lettuce?

Yes, baby spinach works just as well and tastes even milder.

Is it vegan?

Yes, if you leave out the honey or use agave syrup.

Do I need to peel the kiwis?

Peeling is recommended; the furry skin is edible but makes the texture rough.
