Method

  1. Wash the persimmons, remove the stalk and any seeds and cut into pieces.
  2. Wash the spinach.
  3. Peel the ginger and chop it finely.
  4. Blend everything with the water for about 60 seconds.

Persimmons, also sold as kaki or sharon fruit, are in season in late autumn and winter. Fully ripe, their flesh is soft and very sweet, with notes of apricot and honey; they contain provitamin A and fibre. Fresh ginger adds a clean, warming sharpness that keeps the sweetness in check, and baby spinach contributes a mild green note, though the orange fruit often dominates the colour. A good smoothie for cold, grey mornings.

  • Use only very soft, ripe persimmons; unripe ones can taste unpleasantly astringent.
  • Sharon fruit can be used while still firm, as it is bred to be less astringent.
