Cherimoya Smoothie with Baby Spinach

Three ingredients, and none of them is sugar: the cherimoya is sweet and creamy enough on its own. Baby spinach adds colour and a mild green note.

Method

  1. Halve the cherimoya, spoon out the flesh and remove every black seed.
  2. Wash the baby spinach and let it drain.
  3. Blend spinach and water until smooth, then add the cherimoya.
  4. Blend again until creamy and serve immediately.

About this smoothie

Cherimoya, also called custard apple, grows in subtropical regions and has a soft, white flesh with a flavour somewhere between banana, pineapple and pear. It is naturally very sweet and contains vitamin C and fibre.

Because it is so creamy, it works in smoothies much like banana does, which makes it a good banana-free green smoothie. Baby spinach blends easily and stays in the background. Remember to remove all the seeds.

Bartender tips

  • Remove all seeds carefully: cherimoya seeds are not edible and must never go into the blender.
  • If the cherimoya is not quite ripe, leave it at room temperature for a day or two.

With lime and mint
Add 1 tsp lime juice and a few mint leaves for more freshness.
