This smoothie is close to a classic banana shake, just lighter and with a coconut twist. Soy milk is mild and slightly nutty and contains protein, and the yoghurt adds a pleasant freshness. Coconut oil is mainly there for aroma and mouthfeel, so two teaspoons are plenty.
It makes a quick, filling breakfast and is popular with children too. Choose soy yoghurt and it becomes fully plant based.
