About this smoothie

Hazelnuts are mostly associated with chocolate spreads and baking, but blended into a smoothie they give a creamy texture and a warm, toasty taste. Nuts contain unsaturated fats, protein and fibre, so this smoothie is more filling than a pure fruit drink. A ripe banana with brown speckles supplies all the sweetness.

It makes a good breakfast or a snack after exercise. Toasting the hazelnuts briefly in a dry pan brings out much more flavour; let them cool before blending.

Bartender tips

  • Blending nuts and milk first gives a smoother texture without gritty bits.
  • Skinned hazelnuts taste milder; with skins the smoothie is a little more bitter.

Variations

Chocolate hazelnut
Add 1 tsp unsweetened cocoa powder for a smoothie reminiscent of hazelnut chocolate spread.
