Kiwi Dandelion Smoothie with Cucumber

This is a proper green smoothie, more cucumber water than fruit shake. Kiwi brings the acidity, cucumber the freshness, and a few dandelion leaves a gentle bitter edge.

About this smoothie

Cucumber is mostly water, which makes it an ideal base for light green smoothies: it adds volume and a cool, clean taste. Kiwi provides a good dose of vitamin C and enough tartness to keep the drink lively, while baby spinach adds colour and a mild green flavour.

Dandelion leaves are the adventurous part. They are pleasantly bitter, similar to rocket or chicory, and the young leaves from spring are the mildest. This smoothie is not sweet, so it suits people who prefer vegetable juices to fruit shakes.

Bartender tips

  • If it is too bitter for you, add half a green apple or a teaspoon of honey.
  • Use chilled cucumber and water, as this smoothie has no frozen fruit to cool it.

Variations

With apple
Add half a green apple for more sweetness and body.

Frequently asked questions

Is this smoothie sweet?

No, it is deliberately light and tart. Add apple or banana if you want it sweeter.

Do I have to peel the cucumber?

Not if it is organic and unwaxed. The peel makes the colour darker and the taste a little grassier.

Is it vegan?

Yes, all ingredients are plant based.
