About this smoothie

Pear and rocket (arugula) is a well-loved salad pairing, and it translates well to the blender. The ripe pear provides sweetness and juice, the rocket a mustardy bite, and the avocado a creamy body with mostly unsaturated fats.

Coconut water keeps the smoothie light, and a little agave syrup can round it off if the pear is not very sweet. It suits a late breakfast or a light lunch.

Bartender tips

  • Use a very ripe pear: it makes the arugula taste milder.
  • Blend briefly with a few ice cubes for a colder drink.

Variations

Milder version
Swap the arugula for baby spinach or lamb's lettuce.

Frequently asked questions

Is it very peppery?

No, the pear and avocado soften the arugula a lot. Use less if you are unsure.

Is it vegan?

Yes, all ingredients are plant based.

Can I leave out the agave syrup?

Yes, with a ripe pear it is usually sweet enough.
