About this smoothie

Lamb's lettuce, also known as corn salad, is a tender winter and spring salad with small, soft leaves and a mild, nutty flavour, which makes it a good alternative to spinach in green smoothies. Apricots bring sweetness and a light acidity, the apple adds juiciness and body. With water as the base, the smoothie is light and fresh. It suits a morning start or a small afternoon snack.

Bartender tips

  • Swirl the lamb's lettuce in a bowl of water several times and lift it out, rather than pouring it into a sieve with the sand.
  • Out of apricot season, use a ripe nectarine instead.

Variations

With banana
Add half a banana for a creamier, sweeter smoothie.
