Apple Apricot Smoothie with Soy Milk

Taste

Creamy and fruity with apricot sweetness, a soft apple note and a smooth, milky body.

About this smoothie

Apricots are at their best from early to late summer. They have a delicate, honeyed sweetness with a gentle tartness near the skin and provide beta carotene, which the body converts into vitamin A. Soy milk is one of the few plant drinks with a protein content similar to cow milk, which makes the smoothie more satisfying. The red apple adds sweetness and fibre, baby spinach mild greens. The result is creamy, fruity and completely plant based, a solid breakfast for anyone avoiding dairy.

Bartender tips

  • Unsweetened soy milk keeps the fruit flavour clean.
  • A few drops of vanilla extract go very well with apricot and soy.

Variations

With oat milk
Oat milk instead of soy milk makes it slightly sweeter and even creamier.
