Almond Milk Smoothie with Sultanas

Sultanas sweeten this smoothie naturally and add a light raisin and caramel note. With juicy pear and almond milk, it tastes a little like a liquid pear strudel.

About this smoothie

Sultanas are dried white grapes and taste sweet, fruity and slightly caramelised. Soaking them briefly in the almond milk softens them so they blend completely smooth, and they replace any added sugar. The ripe pear brings juiciness and body, and unsweetened almond milk adds a mild, nutty note.

The smoothie is vegan and suits autumn and winter breakfasts. Because dried fruit is concentrated in sugar, a small amount is enough.

Bartender tips

  • Soaking is important; unsoaked sultanas leave small pieces of skin.
  • A pinch of cinnamon brings out the strudel character.

Variations

Winter spice
Add a pinch each of cinnamon and ground ginger.
