Method

  1. Wash the baby spinach thoroughly.
  2. Halve the passion fruits and scoop out the pulp.
  3. Blend spinach, passion fruit, chia seeds and coconut milk for about 45 seconds.
  4. Taste, sweeten with agave syrup if needed and pour.

About this smoothie

This smoothie uses coconut milk drink from the carton, which is thinner and lighter than canned coconut milk. Passion fruit brings plenty of acidity and aroma, so the creamy coconut is a natural balance. Baby spinach adds a pale green colour without much flavour of its own.

Chia seeds make the texture a little thicker and add some fibre. The smoothie is creamy but not heavy, good for breakfast or as a sweet snack.
