Blackberry Spinach Smoothie with Coconut Milk

Three kinds of greens are hidden in this smoothie, yet it looks and tastes mainly of blackberries. Coconut milk makes it creamy and rounds off the tartness.

Blackberry Spinach Smoothie with Coconut Milk

Taste

Creamy and fruity, with tart blackberry, a soft coconut roundness and a faint peppery green note.

About this smoothie

Mixing several leafy greens is a simple way to add variety to a smoothie. Baby spinach and lamb's lettuce are mild, while a small amount of rocket brings a faint peppery note. Together they contribute folate and vitamin K. Blackberries dominate the flavour and colour and add fibre from their seeds.

Coconut milk turns the whole drink creamy and gives it a gentle tropical aroma. The smoothie is dairy free and fairly filling, suitable for breakfast or as a snack when you want something richer than a fruit juice.

Bartender tips

  • Use drinking coconut milk from a carton, or mix canned coconut milk half and half with water.
  • Frozen blackberries make it thick like a milkshake.

Variations

Blueberry swap
Use blueberries instead of blackberries for a sweeter, milder smoothie.
