Method

  1. Peel the persimmon and cut it into pieces.
  2. Wash the baby spinach.
  3. Halve the passion fruit and scoop out the pulp.
  4. Blend spinach, persimmon and coconut water until smooth, add the passion fruit and pulse briefly.

Passion fruit is one of the most aromatic fruits there is, and just one is enough to perfume a whole glass. Its tartness is a good counterweight to the honeyed sweetness of ripe persimmon. Passion fruit also contains fibre, mostly in its edible seeds.

If you prefer a smooth drink, pulse the passion fruit only briefly or strain the pulp. The spinach adds colour and leafy greens without changing the taste. A bright choice for a winter morning.
