About this smoothie

Nectarines are at their best in July and August, when they are juicy and fragrant. Their thin skin blends easily, so there is no need to peel them. A whole banana makes the smoothie creamy even with plain water as the liquid. Coconut oil is mostly saturated fat and should be used sparingly, but a teaspoon adds a pleasant coconut aroma and a rounder mouthfeel. The drink is vegan and fits a summer breakfast.

Bartender tips

  • Add the coconut oil while blending so it does not solidify into small lumps.
  • Frozen nectarine slices or a frozen banana make the drink cold and thick.

Variations

Coconut water version
